Based on a Charlotte Vaucher recipe from 1935, the La Clandestine VSO Barrique is a truly unique absinthe that has been aged in oak for six years. This maturation for six years allows the flavours of this classic absinthe to emit spicy notes reminiscent of high-quality Cognac.
To the nose, the Barrique Absinthe by La Clandestine offers the normal fragrance you would expect from a typical La Clandestine with the addition of some incredible vanilla and toffee notes. This unique and intriguing perfumery is also supplemented by its warm oak sweetness and hints of toffee.
It does not have a tannin astringency that typically comes from overly matured whiskies. In fact, this absinthe has managed to pick up many good qualities of cognac or whiskey from the wood, while retaining all of the characteristics of a quality absinthe.
Recommended for sipping or savourting after dinner, the Barrique Absinthe La Clandestine VSO Barrique pairs brilliantly with goats cheese, onion tarts and tuna steak.
